These are just some of the melt-in-your-mouth choices available during the final two five-star dinners being offered this spring by the students and staff of the Rend Lake College Culinary Arts program.
The All-American Grille dinner is set for Thursday, April 3, and Friday, April 4. Diners can choose from two entrees: New York balsamic-glazed pan-seared rib eye and lobster tails with roasted rosemary-garlic red-skin potatoes, or Pacific Northwest herb-crusted salmon with toasted pecan wild rice pilaf.
The choice of appetizers is Maryland soft-shelled crab cakes with jalapeno citrus salsa or San Francisco cioppino with herbed focaccia. Cheese straws will be placed at every table. For dessert, try the New England mixed berry shortcake with amaretto whipped cream and white chocolate shavings, or the Cobden almond apple-berry cobbler with vanilla brown sugar cream.
Looking for a little taste of the South? Look no further than the Southern Hospitality dinner, set for Thursday, April 10, and Friday, April 11. Start off with an appetizer of fried green tomatoes with roasted red pepper coulis and crumbled bleu cheese, or corn fritters with a garlic parsley drizzle. Fresh-baked buttermilk biscuits with sweet creamery butter and wild honey will be placed at every table.
For the main course, choose from slow-roasted beef tenderloin with gorgonzola and pine nuts with sweet bourbon-glazed carrots and bacon-cheddar whipped potatoes, or a grilled center-cut pork chop with peach barbecue sauce with mashed sweet potatoes and grilled fresh green beans.
Don't forget dessert. Have a helping of peach melba with raspberry sauce and vanilla bean ice cream, or go for the chocolate-bourbon pecan pie with praline ice cream.
All dinners will be held in the renovated Private Dining Room in the Student Center on the Rend Lake College campus in Ina. Dinners are $20 per person, and reservations are required. Seating times are 4:30 p.m. and 5:30 p.m. for each event.
