Seats at the RLC Fine Dining Series, presented by the Culinary Arts program, are going fast. The first two dinners in the series, "A Night of Northeastern Cuisine" and "Southern Style," already have sold out.
"Tastes of the Midwest," the third installment in the series, will be held Thursday, March 24, and Friday, March 25. About half the tables for both seatings already are reserved. This down-home meal starts with yeast rolls and honey butter followed by a fresh, crisp spinach salad with balsamic vinaigrette. Then take your pick of two Midwestern main courses: braised short ribs with sides of sweet potato fries and cheesy corn bake, or cedar-plank Great Lakes whitefish with sides of toasted-almond wild rice and sautéed baby zucchini and yellow squash with fresh basil and parmesan. The finisher of this all-American meal is an apple tarte tatin with vanilla bean ice cream.
"A Taste of the Pacific Coast," the fresh finale to this year's series, also has only about half of its tables available. It is set for Thursday, March 31, and Friday, April 1. This meal starts with a zesty tomato basil bruschetta, followed by your choice of black bean tortilla soup or a garden-fresh salad as an appetizer. Classic Pacific flavors star as the entrées. Choose from grilled salmon with citrus beurre blanc, served with wild rice pilaf and garlic green beans, or applewood-smoked pork with apple cider vinaigrette, served with mushroom and apple stuffing and cider and herb green beans. Top off this amazing meal with a delicious strawberry shortcake and chocolate sauce with vanilla bean ice cream.
